Almond Hot Chocolate with Jasmine Whipped Cream

I started making this in my first Toronto winter when I was looking for a hot chocolate that felt more interesting than the packet version but still simple enough to make on a weeknight. Toasting the almonds before making the milk from scratch changes the flavour completely. This is the drink I make when I need to feel taken care of.

Method

  1. 1 Combine milk, heavy cream, and chocolate in a pot over medium heat.
  2. 2 Stir until melted and velvety smooth. Add almond extract.
  3. 3 Whip cream with jasmine powder until fluffy.
  4. 4 Pour into your favourite mug and top with jasmine whipped cream.

Tips & Notes

Use good quality dark chocolate for the richest flavour. The jasmine whipped cream can be made ahead and kept in the fridge for up to 2 hours. For a dairy free version, swap the heavy cream for full fat coconut cream. This drink is best served immediately while the whipped cream is still fluffy.
