This apple pie matcha latte is autumn in a glass earthy, spiced, and just a little bit indulgent. The apple pie syrup is made from scratch with real diced apple cooked down until soft and jammy, then strained into a glossy, cinnamon-scented liquid. It pairs with matcha in a way that sounds unexpected but tastes completely natural. The warmth of the spices balances the grassiness of the matcha beautifully. This is the drink that made me fall in love with seasonal lattes all over again.

Method

  1. 1Dice 1 medium apple into small cubes.
  2. 2In a small pan, melt butter then add the apples, brown sugar, cinnamon, and a splash of vanilla extract.
  3. 3Cook on medium heat, stirring occasionally, until apples are soft and syrupy, about 8 to 10 minutes.
  4. 4Strain the mixture and let it cool completely.
  5. 5Whisk matcha powder with a little hot water until smooth.
  6. 6Fill a glass with ice, then pour in the apple syrup and milk of your choice.
  7. 7Top with matcha and whipped cream if desired.

Tips & Notes

The apple pie syrup can be made in advance and stored in the fridge for up to a week it's great stirred into oatmeal too. Ceremonial grade matcha will give you the smoothest, least bitter result. Make sure your water is not boiling or it will make the matcha taste bitter.
