Earl Grey Creme Brulee Latte
The idea for this drink came from the jasmine creme brulee shortbread I had been making. I wanted to see if I could capture that same flavour in a latte format. Steeping earl grey directly into the warm milk and adding a caramelised sugar element to the top gives you something that sits between a tea latte and an actual creme brulee. It is one of the most requested drinks from anyone who has tried it.
Ingredients
- 3 tablespoons Earl Grey tea
- 1/4 cup hot water
- 3 tablespoons heavy cream
- 2 tablespoons milk
- 2 tablespoons maple syrup
- 1/4 cup custard (homemade or instant, prepared)
- 2 tablespoons custard (for the bottom of the cup)
- Ice cubes
- 3/4 cup milk of choice
- 2–3 tablespoons granulated sugar (for torching)

Steep 3 tablespoons of Earl Grey tea in 1/4 cup of hot water for 5–7 minutes. Set aside to cool.

Whisk together heavy cream, milk, and maple syrup until thickened. Fold in the prepared custard until smooth.

Add custard to the bottom of your glass, then add ice, milk, and brewed Earl Grey tea.

Top with custard cream.

Sprinkle sugar over the top and torch until golden and crispy.

Tips & Notes
Steep the earl grey tea bags for at least 5 minutes for a strong enough flavour. This latte is all about balance the floral bergamot in earl grey pairs beautifully with the vanilla notes of a creme brulee syrup. It is just as delicious served iced.
