Earl Grey Creme Brulee Latte
This earl grey creme brulee latte is an homage to two of the most elegant things in the world a fragrant cup of earl grey and a perfectly caramelised creme brulee. The bergamot in the tea brings a floral, citrusy note that pairs beautifully with a rich vanilla syrup. Together they create something that tastes like a dessert you could drink at any time of day. It works iced or hot, making it a drink for every season. This is the latte for when you want to feel genuinely indulged.
Ingredients
- 3 tablespoons Earl Grey tea
- 1/4 cup hot water
- 3 tablespoons heavy cream
- 2 tablespoons milk
- 2 tablespoons maple syrup
- 1/4 cup custard (homemade or instant, prepared)
- 2 tablespoons custard (for the bottom of the cup)
- Ice cubes
- 3/4 cup milk of choice
- 2–3 tablespoons granulated sugar (for torching)

Steep 3 tablespoons of Earl Grey tea in 1/4 cup of hot water for 5–7 minutes. Set aside to cool.

Whisk together heavy cream, milk, and maple syrup until thickened. Fold in the prepared custard until smooth.

Add custard to the bottom of your glass, then add ice, milk, and brewed Earl Grey tea.

Top with custard cream.

Sprinkle sugar over the top and torch until golden and crispy.

Tips & Notes
Steep the earl grey tea bags for at least 5 minutes for a strong enough flavour. This latte is all about balance the floral bergamot in earl grey pairs beautifully with the vanilla notes of a creme brulee syrup. It is just as delicious served iced.
