This is a layered iced latte that takes a few more steps than my usual drinks but is completely worth it. The peach compote at the bottom is blended smooth so it sits under the ice like a jammy, sweet base, the Earl Grey oat milk is cold steeped for maximum flavour, and the matcha goes on top last, poured slowly so you get those visible layers before you stir. I use DAVIDsTEA Cream of Earl Grey for this because the vanilla notes in it pair really well with both the peach and the matcha. It is the kind of drink that photographs beautifully and tastes even better.

For maximum flavour, steep the Earl Grey milk overnight in the fridge. This gives a stronger, more developed tea flavour than a quick steep. The peach compote can easily be made in a bigger batch and stored in the fridge for the week, great for multiple lattes or spooned over yogurt and oatmeal. Adjust sweetness to taste if your peach is not very ripe, add an extra teaspoon of honey or brown sugar. Swap oat milk for any milk you like. Cream of Earl Grey pairs especially well with oat, whole, or barista blend oat milk since it steams and froths nicely.
