Ube Hojicha Latte

Ube and hojicha is one of those combinations where the purple and brown together look almost too good to drink. The earthiness of hojicha and the sweet, vanilla-adjacent flavour of ube are different enough to be interesting and similar enough to be comfortable together. I use store bought ube halaya for this which makes it achievable on a weekday morning.

Method

  1. 1Sift hojicha powder into a small bowl.
  2. 2Pour boiling water into a teacup to cool it to 175°F, then pour into the tea bowl with the hojicha.
  3. 3Add maple syrup and whisk vigorously for 15 seconds in an "M" shape until smooth and frothy.
  4. 4Stir ube extract into the milk until combined.
  5. 5Add ice to a glass, pour in the ube milk, then slowly pour the hojicha on top.

Tips & Notes

Ube halaya can be found at Filipino grocery stores or online. The earthiness of hojicha balances the sweetness of ube beautifully. This latte is stunning served in a clear glass so the purple and brown layers are visible.
