Ube Hojicha Latte

Ube hojicha latte is one of the most visually striking drinks I have ever made the deep purple of ube against the warm brown of hojicha creates a layered gradient that is genuinely beautiful in a clear glass. The sweetness of ube halaya balances the roasted bitterness of hojicha in a way that makes every sip feel harmonious. It is a drink that bridges Filipino and Japanese flavour traditions in the most natural way. Served iced over a tall glass, it is the drink that stops people in their tracks on a busy afternoon. This one was made to be photographed but it is even better to drink.

Method

  1. 1Sift hojicha powder into a small bowl.
  2. 2Pour boiling water into a teacup to cool it to 175°F, then pour into the tea bowl with the hojicha.
  3. 3Add maple syrup and whisk vigorously for 15 seconds in an "M" shape until smooth and frothy.
  4. 4Stir ube extract into the milk until combined.
  5. 5Add ice to a glass, pour in the ube milk, then slowly pour the hojicha on top.
